Appam is a traditional Kerala delicacy made from fermented rice batter, known for its soft, spongy centre and thin, slightly crispy edges.

Eastern Appam Powder makes preparation simple and convenient while delivering the authentic taste and texture of traditional appam. Enjoy it for breakfast, dinner or as a delicious accompaniment to curries and stews.

ooking Instructions

Ingredients required:

  • Eastern Appam Powder – 1kg

  • Water – as required

  • Yeast – according to the pack instructions

  • Sugar – as required

  • Salt – to taste

Method:

  1. Take the required quantity of Eastern Appam Powder in a clean mixing bowl.

  2. Add water gradually and mix well to form a smooth, lump-free batter.

  3. Add yeast and sugar as recommended on the package and mix thoroughly.

  4. Cover the batter and leave it in a warm place to ferment. Allow sufficient fermentation time until the batter becomes light and slightly bubbly.

  5. After fermentation, add salt and adjust the consistency with a little water if required. The batter should be smooth and pourable.

  6. Heat an appam pan or non-stick pan over medium heat.

  7. Pour a ladleful of batter into the centre of the pan.

  8. Lift the pan and gently swirl it in a circular motion so that the batter spreads towards the sides, leaving the centre slightly thicker.

  9. Cover with a lid and cook until the centre is soft and cooked through and the edges become lightly golden and crisp.

  10. Remove carefully and repeat with the remaining batter.

Serving Suggestions

Serve hot with vegetable stew, coconut milk, chicken curry, egg curry, kadala curry or your favourite South Indian curry. Appam is also delicious with sweetened coconut milk for a simple traditional treat.
