These lentils are easy to incorporate into everyday meals and work particularly well with aromatic Indian spices. They can be cooked whole for a hearty texture or used as a base for delicious vegetarian and vegan dishes.

Cooking Instructions

1. Rinse the green lentils thoroughly under cold water.

2. Soak for 30–60 minutes if desired. Soaking can help reduce cooking time.

3. Add the lentils and fresh water to a pot and bring to a boil.

4. Reduce the heat, cover and simmer for approximately 25–35 minutes, or until the lentils are tender but still retain their shape.

5. Heat oil or ghee in a separate pan.

6. Add cumin seeds and allow them to sizzle.

7. Add chopped onion and sauté until golden.

8. Add green chilli, tomatoes, turmeric, coriander powder, chilli powder and salt.

9. Cook until the tomatoes become soft and the masala is well combined.

10. Add the cooked lentils and mix well.

11. Simmer for another 5–10 minutes, adding water if necessary to achieve your preferred consistency.

12. Garnish with fresh coriander and a squeeze of lemon juice.
