Double Horse White Aval is easy to cook and absorbs flavours beautifully, making it an excellent pantry staple for Indian cooking. Prepare it with onions, green chillies, vegetables, peanuts, spices, and fresh herbs for a delicious South Indian-style Aval Upma or Poha.

🍳 Cooking Instructions – Basic Poha

Ingredients:

  • 2 cups Double Horse White Aval
  • 1 medium onion, finely chopped
  • 1–2 green chillies, chopped
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 8–10 curry leaves
  • 2 tbsp peanuts
  • ¼ tsp turmeric powder
  • 1–2 tbsp cooking oil
  • Salt to taste
  • Fresh coriander
  • Lemon juice

Method:

  1. Place the aval in a sieve and rinse gently under running water.
  2. Drain completely and allow it to rest for 5–10 minutes.
  3. Heat oil in a pan and add mustard seeds and cumin seeds.
  4. Add peanuts, curry leaves, green chillies, and chopped onion. Sauté until the onion becomes soft.
  5. Add turmeric powder and salt.
  6. Add the soaked aval and mix gently.
  7. Cook on low heat for 2–3 minutes.
  8. Turn off the heat and finish with fresh coriander and a squeeze of lemon juice.
  9. Serve hot.

🥕 Vegetable Poha

For a nutritious variation, add chopped carrots, peas, beans, potatoes, or bell peppers while cooking the onions. Sauté the vegetables until tender before adding the prepared aval.

🥜 Peanut Poha

For a crunchy and flavourful breakfast, increase the quantity of roasted peanuts and add them just before serving. You can also garnish with fresh coriander and grated coconut.

🥔 Aloo Aval / Potato Poha

Sauté diced potatoes with onions, green chillies, mustard seeds, cumin, and turmeric. Once the potatoes are cooked, add the rinsed aval and mix gently. Cook for a few minutes and serve warm.

🌴 Kerala-Style Aval Upma

For a Kerala-inspired variation, sauté mustard seeds, curry leaves, green chillies, onion, and grated coconut. Add the rinsed aval, salt, and a little turmeric, then cook briefly for a fragrant and satisfying breakfast.
